Temperature drops and then the car missfires.

I own a 2000 Chevrolet Camaro Z28 98,000 miles. 350/5.7 LS1 engine. When I was going up a few hills that weren't very steep at all the temp. Gauge would plummet to 100 degrees and the car would miss (or jump, missfire) kinda like you let off the gas for a split second and press it again. I had the cruise on so it was not my error. Tends to do it more often going up an incline, but does it in the straightaways as well. Can my thermostat cause the car to lose power like that? I noticed it missfiring and then I checked the gauges and notice every time it happens the temperature is fluxuating very quickly up and down.

Your computer will read the temp gauge and compensate the fuel for the temperature. If your sensor is reading normal and then falls the computer might be opening the injectors for longer and flooding out the cylinder, maybe even fouling the plug. I would have the sensor checked with a multimeter to see if it is in specs
