2003 Buick Lesabre Engine running for long time low on oil

I went for an oil change and about 2100 miles later my engine oil light came on. Upon checking the dipstick I discovered that only 1-2 quarts of oil were in the engine. I took it to the dealearship and they verified this fact. How much if any damage can occur to an engine running low on oil for that long?

If you have no knocking or ticking in the engine, it should be fine. If run on too little oil, damage to bearing, cylenders, cam... can occurr. But if there is no engine noise, it should be fine.
