1991 Acura Legend Temp guage/heating problem

Hi, I have a 1991 acura legend with approx. 160,000 miles. Started to have eratic temperature guage spike so replaced all the sensors, got new water pump installed, new hoses, new heater control. New guages. But still I will have heat for a few minitues then it will go cold then come back and keep doing this, meantime heat temp guage is pegged on high. Also surging of engine occurs. Not sure what else to do to try and fix problem.

After replacement of all the items, did you bleed the system?
Are you getting any coolant losses at the radiator?

BLEEDING COOLING SYSTEM
Always bleed air from cooling system when changing coolant. Open bleed bolt on coolant outlet. Fill system. Close bleed bolt when coolant starts to run out without bubbles. Tighten bleed bolt to 84 INCH lbs. (10 N.M). With radiator cap removed, start and run engine until normal operating temperature is reached. Top off coolant and install radiator cap.
