The accelerator pedal has sunken but is still responsive. How do I raise the level up as there is a significant difference between the height of surrounding pedals?

A brief history on repairs; the clutch master cylinder was replaced this year in January, the clutch sensor was replaced in October and in November I had the brake and clutch bled and a gear oil box seal repaired.

Thankful for your help on this.

This is odd. The accelerator pedal is just a lever that as a sensor in it. The sensors measure how far the pedal is pressed and then sends a signal to the PCM where it controls the throttle blade.

I don't see it as an option but do you have adjustable pedals? If it has moved then I have to imagine the assembly is broken. Can you get a picture of it if this doesn't make sense? I would look up to where it bolts to the floor board and see if it has come loose.
