Maintenance on 2007 Lexus ES 350 with 120K miles, 80% highway miles? Maintnenace schedule shows replacement of brake fluid and engine coolant. Do these really brake down and need to be flushed and replaced? If so, with the high freeway miles, can I assume that they can be extended for awhile?

Yes it does. See brake fluid is meant to absorb moister. With that said as it does that it starts to darken and then its boiling point lowers and that's when you start to get troubles, that will also start to rust the inside the calipers and such if let to go to that point.
