I have a 2005 Mazda 6 1800 tc. When in 5th gear on the motorway the gear stick slips into neutral repeatedly.

Manual transmissions use synchronizers that engage when you depress the clutch pedal. One of the things they do is align the gears, allowing you to shift without that nasty crunching sound. It sounds to me like they aren't disengaging when you let off the clutch. If you can get your hands on a Chiltons or Haynes motor manual, you should be able to repair it yourself.
