Thermostat issues for 2000 Venture

I have a 2000 Chevy Venture. Recently it quit blowing out head and the temperature gauge goes crazy. Going all the way to "HOT" back down to a quarter. Then back up to HOT. Etc etc. Does that sound like a thermostat issue? And if so. Can you tell me how to change out the thermostat?

Is the system full of antifreeze? These cars are known for bad intake gaskets that have to be replaced in order to fix overheating problems. Which might be what you described as blowing out head.

You could also have a leaking head gasket. The rise and fall of temp gauge is due to air in the system. This air is due to a leak or not filling the system properly.
