What is the engine code? ALH, BEW etc?

If the engine is similar to North American Golf / Jetta 1.9L TDi, then follow the lower radiator hose to the thermostat
cover / flange:

I do not yet have a TDi thermostat changing video on my youtube channel, but will add one as soon as I get the
chance to change one.

You will need a 10mm universal socket (1/4" with long extension and ratchet)... only open the system once the
engine is cold.

Once I know what your engine code is, I can look up more specific information.
