I have replaced the thermostat and the radiator on my 1995 BMW 525i, but the gauge still runs to the hot temp and say check coolant temp. What is the problem?

The temp gauge goes into the red after the car heats up fully. Then I shut it off because the car shows "check coolant temp" on the dash.
