My car is severely shooting water out of tank on side of car. And it does not want to start. I have been told thermostat, water pump, or head gasket.

If car ran a few minutes then It may be the thermostat, but more than likely it is a head gasket problem. Rent a pressure checker from auto parts, fill with coolant and see if it holds pressure more than likely it is the head gasket.
