When I arrive to a complete stop my rpm's bounce up and down, even to the point where the car acts as though it needs to shut off. I took it to Autozone and the only thing that came up was that the timing belt needed to be replaced. I replacing that as well as the water pump, but I am afraid that that may not by my issue with the rpm's?

Try cleaning the throttle plate on both sides and IAC hole with choke cleaner. Do not let an auto parts person diagnose anything for you they do not work on them and are just guessing. If you have a belt on timing chain then it should have been replaced 24,000 miles ago.
