My car is overheating

Hello, I have a 99 ford escort with about 159000 I lost the count with the mecanic now my car is overheating and I check the coolant and everything is fine It doesn't need water/coolant but the heater marker shows that its heating up and it goes almost to the red spot, it comes back to the middle for a while but then it goes back to the max again and it happens more frequently in stoplights, I whent to the mechanic yesterday and he told me that everything was alright, I checked also for leaks but I didn't found any. I change the radiator like about a year ago and it looks good. Another thing is If should it have a funny smell when is heating up? Do you have any advise? I am feeling hopeless

Start with the thermostat find and replace it then report back.

I did replace the thermostat but it seems that is not the problem, do you think if it would be best to go and put my fan to start when ever I start my car?

Should not smell bad. But id check the water pump since its not the thermometer Then again the Coolant sensor and sending unit could be bad id check that before I went anyfarther.
