Having a hard time installing a new clutch cable. The cable itself seems too short. I have tried a numerous amount of things and it feels like it should be fairly simple. I am not sure what else to do and don't want to take it to a mechanic when I feel like I could do it myself.

I have to admit I never replaced one while at the dealership, but there is one thing you might look at. Around the mid 1990's Chrysler started using clutch pedal assemblies with automatic adjusters. There was a rack of teeth either on the end of the cable or on the part the cable attaches to under the dash. On the pedal is a mating rack of teeth that drop down onto the cable's teeth as soon as you start to push the pedal. Once the teeth are meshed together, pushing the pedal further will pull on the cable.

If I remember correctly, if you pull the pedal all the way up by hand, the two toothed parts should disengage, then you can pull the cable part to reach the cable.
