94 LHS over heating

It's a 3.5l, the problem I'm having is this. The car runs extremely well for it's mileage at 165,000. But it over heats due to the electric fans not coming on. I've replaced the temp sensor thermostat and radiator, bled the system of air, new hoses and all. If I unplug the temp sensor on the water neck, both of the electric fans will come on and cool the system. Otherwise they don't come on and the car starts to run hot. Not wanting to warp a head or blow a head gasket I'm looking for a little help. It's got to be something I am overlooking. Any help is greatly apprecitaed as this is my Grandmothers car were trying to fix, so she can get something without all the problems this car has had. Thank you in advance.

I had same problem on my 95 LHS. Never learned the cause of this. Dealer wanted $450 to fix. So, I fixed myself by cutting wires to the fans and installed a switch to turn on fans myself. Ackward, yes, but works great. Cost, $2.75 for on/off switch from radio shack. Now a habit to turn on fans whenever I drive.
