Car random engine cutting out issue

Hi, I have a vw polo 2002 reg and my car sometimes stalls when reaching roughly 20 rpm, it doesnt happen every time but it does nearly every 3/4 days. It seems to be worse when I have been driving for a little bit, stopped the engine for a little bit and started it up again. I also have a coolant loss where it loses water every 3 days of roughly 30 minutes commute to work and 30 mins back, the coolant runs out 2/3 times when driving for 45 minutes on the motorway there and back, this may not help the situation but mechanics are finding it hard to find where this leak is from so I dont know if that is at all related, also my temperature gauge on the dashboard of my car doesnt work so I dont know if that also has something to do with it.
my car can do the stalling thing randomly as well, I could be driving for 10-15 mins and it will randomly just judder and either cut out or carry on and judder again a minute or so after, if you could help that would be brilliant as I have spent alot of money on mechanics trying to identify the problems to no prevail.

Does the car smoke at all? It sounds like a possible blown head gasket. If not then the car may be overheating causing the rough running and cutting off. You should definitely get the temp gauge repaired. Do you ever see coolant on the ground? If not, check the oil. Is it milky or gray and thick? That's coolant in the oil if so. That's a blown head gasket

I do not believe it smokes at all, I cant see it in my wing mirrors at all and I would have thought that after a mechanic doing a compression test they would have seen if it was the head gasket, how much would it be to sort the temp gauge out or would I possibly be able to sort that out myself? There is no coolant on the ground (to my knowledge) and I have checked the oil and there is not milky residue in it so I cant see it being the head gasket.

A compression test would have revealed this, youre right. The coolant loss is my concern here. I believe its tied to your running problem. It is coming out somewhere and we first need to find out where
