yes it will run with just water in the system.
But, if you are running in hotter temp than average ( Arizona). anti freeze/ coolant will handle hotter temps, without boiling, than just water.
As with cooler temps ( U.P. Michigan) anti freeze/ coolant can handle much lower temps, without freezing, than just water.
