I want to bypass the a/c compressor, I bought bypass pulley to do so, but I have questions. If I remove the a/c, do I need to remove the lines too? Or can they be left alone? And will I still have heat and defrost.

Obviously, if you remove the compressor, you'll have to either remove the hoses leading to it or somehow secure them from flopping about. The same with the wire to the compressor. You will still have heat, and defrost might not work as well, but it should still blow. Normally, defrost runs both the a/c and heater together, the a/c to dry the air. I'd also remove the fuse to the a/c compressor just for safety with that wire.
