It appears my belt is gone from the alternator so I have nothing to take note of as I plan to put on a new one. It looks fairly simple. What other belts will I need to remove? Should I replace those as well? I cannot seem to find a clear diagram.

If belts are suspect it is better to replace all at the same time, just to be safe.

AC and power steering belt have to be removed to install new alternator belt? Can this be done without removing engine mounts and hoses?

Yes, the belts can be replaced with out stripping this out, it may be a tight squeeze but you should be able to get it done
