Had fuel pump issues. Truck runs great! My only issue is after resetting my truck by disconnecting the battery then reconnecting it I will go start the truck and have the correct reading on digital and meddle reading of the fuel. After about one to two minutes my needle will dive past E then my digital gauge will read - - - miles to E. I am completely lost on what I’ve done. Any help would be appreciated.

This sounds to me like you could have a faulty fuel sending unit. The fuel sending unit is usually attached to fuel hanger and is a float the as it moves up and down with the fuel level, it produces electricity that your vehicle's Power-train Control Module (PCM) uses to interpret the amount of fuel in the tank. Sometimes, through normal wear and tear and gunk that collects over time your vehicle's fuel sending unit will fail. When this happens your fuel tank will not read properly, if at all.
In the diagrams down below I have included instructions for the removal and installation of the fuel sending unit. Please go through this guide and get back to us with what you are able to find out.

Thanks,
Alex
