Can I switch my 2005 jetta's 2.5L engine for a 3.2L engine?

No, you can not. The entire operating system which consists of all the wiring, control modules and sensors were engineered for a specific engine in a specific vehicle with specific options, not to mention all the mechanical and body issues that would arise and the fact that it would be against federal law to do that to a Federally emissions certified vehicle.
