I have a 2000 vw golf, it is turning on, but when I start to drive it starts to jump once I get to 20 rpms, it moves but has no power and is jumping until I stop. I can turn off my car, leave it for a day and than try driving again it will last for a little and than start jumping but still drivable and than it will completely start jumping and it acts up again where it won't go past 20 rpms and no power to drive.

Have any indicator lights or warning lights come on? Have you checked fuel pump pressure?

No check engine light has come on and my fuel pump was replaced 6 months ago so I don't think its that. My car hasn't acted up for two months and than we got a day that just rained all day and it acted up than.

Okay, since the problem started during a rainy day, the leads me to believe it is ignition related. Has the vehicle been tuned up recently, including spark plug wires, coil wire?

I did a tune up at the beginning of the year, but spark plug wires were not changed cause they were still good.

I need you to try something. When it's dark outside, start the engine, open the hood, and mist water on the plug wires to see if anything is arcing.

Sounds good. I know it seems a little crazy, but in the dark, you will see any arcing much easier and misting the plug wires will cause it if there is an issue with them.

Check your Mass Air Flow sensor. It's located right by your air filter. Possibly O2 sensor. Have a mechanic or use a vas 5054a diagnostic tool to look at it for your exact diagnosis.

I tried the misting on the spark plugs and nothing happened. I waited to drive my car for a week and now it's driving fine. It only usually happens when its raining

I'm glad it's running good. However, that makes it hard to locate the problem. At this point, I have to suggest waiting till it happens and having a live scanner put on the vehicle so you can check different sensors to see how they are reacting.
