When I turn the key on my 2000 winstar, sometines I just get a click, and after a couple of tries, the starter engages starts right up, what is the problem?

Most likely the starter is failing, it is going to get worse as time goes by. It could also be due to weak wiring connections and the starter relay

If the clicking is rather prominent, it is the starter solenoid engaging but the starter is not turning. That is because the carbon brushes are not getting full contact to turn the armature. I believe the starter is due for replacement. Get it tested, most part store provides free testings.
