Is there an "o"ring or gasket that could leak coolant into intake? If so that would explain the "dying out" when hot. My first thought when this issue came about was water in the fuel. Can u clean a throttle body? If so, is it better to remove and clean? What do you recommend for cleaner?

You can clean a throttle body in place, just use a high end brand cleaner its just called throttle body cleaner, and wipe as much muck away with a rag as you can, also run a scan for any set fault codes, not all faults will set a check light.
