I am replacing the clutch cable again, and the pedal return spring doesn't engage any solid point to function. Also, the cable seems to be breaking repeatedly right at the pedal assembly after only 2-3 weeks. What could be the problem?

Check the alignment of the cable housing to the pedal attachment point. If the cable is not moving in an unrestricted manner, it would break easily.
Check for weakened support of the cable to body.
As to the spring, check if it is broken, a part could be missing.
