car overheating

I have an 82 Toyota Celica Gt with a 25 RE engine, It came with no thermostat and when I installed one it began to get hot, from flat cold to the red end of the heat gauge in about 7 mins. The shop said everything checks out and there are co2 bubbles leaking into the coolant . Suggestion was that the head come off and be examined. So my question is what does all this entail? My shop is very good I just don't have the cash to fix it right now. Currently I am driving it with no thermostat and the engine only heats to halfway on the gauge and stays there.

i have a 90 tempo that does the same thing. i suspect the radiator is not cooling efficiently. the extra flow of the missing thermo makes up for this deficiency. i'm content to leave it as is.
