how do i remove the existing interstate 75 month battery and replace with a like battery?

Well disconnect the negative cable 1st then the positive-then connect positive cable to the new battery positive terminal and then the negative cable to the negative terminal- your done-

isn't there a third wire that connects to the alternator? if so, where is it?

You should have a no.12 wire attached to the positive battery cable that leads to the fusible link then to the alternator fuse 100amp and back to the battery
