I'm Having a problem keeping the plastic cover attached that provides access to the oil pan and oil filter. Is it ok to leave it off or could this cause a problem?

That is just a splashguard to prevent dirt and debris from hitting the engine. It's ok to leave it off. Replacement at the dealership is around $50-100. You can also buy special clips from the dealer that will hold it in place if the holes aren't torn open.
