What could possibly be the reason for the Check Engine light to come on only when the car is low on fuel? But after putting in more fuel the light will go off after a couple hours or more of driving ...then on again when fuel is low?

Oh this is the GTP model with the supercharger. There doesn't seem to be any noticeable performance changes when the check engine light is on and the fuel level is low.
