1995 Pontiac Grand Prix Engine Coolant light comes on heat

My heat gauge was going up and down then it would go so high the temp light would come on. My husband said the engine was not hot at all. He changed the thermostat, water pump, 2 sensors and the radiator cap. Now since all that has been done the heat gauge goes way up and then falls way back down and then the engine coolant light comes on. Then as soon as the temp gauge goes back up the light comes off. On my way home from work last night i had heat off and on.
