i have change thermostat, ect sensor. had a compression test an change all the gaskets, radiator no leaks or cracks, & the water pump is not leaking. i need help badly

You didn't say so but from your tone I assume you are still losing coolant. Once an engine is severely overheated once, permanent damage can be done pretty easily. You likely have head gasket issues now. You will need to have some chemical tests to the coolant to determine if that is the case or not.

but i have change the headgaskets, lower & upper intake gaskets, & the vavle cover gaskets... i'm still overheating... don't no what 2 do next

Did you do send the head to the machine shop and use new head bolts or just replace the gasket?

yes i did.... & its jus sits at 200-220 degress... but when i unplug the ect sensor the fan kicks on & i have change that twice.

it normal sitting at 200-220 degrees

Yes, definitely. the fan isn't even programmed to come on until about 225.

Make sure you clear the codes you set by unplugging that coolant sensor.
