Car stalling new engine after vigerous distance on highway

2000 Pontiac Grand Am, 160000 on body 800 miles on NEW ENGINE. I just had a brand new engine with 0 miles put into my car about 3 weeks ago and everything ran fine for the first few days. After 500 miles I did like I was told and changed the oil, ect. However, now after driving long distances, approx 50 + miles, whenever I exit and come to a stop at a light and/or stop sign my idle jumps engine oil light (the red oil light) comes on and the car wants to stall (already has nemerously). Could this be an Oxygen Sensor problem? This is really mind boggling because the engine is BRAND NEW.

Could possibly be low oil pressure. Install a manual oil gauge. Get engine up to temp and check oil pressure. Unless you know someone who owns a diagnosis tool. Unfortuantly new parts can fail to.
