Warning sound about high temp once ina while then fan comes on, shouldnt fan come on before it over heats

For a start try replacing the thermostat.

The thermostat controls the engine temperature and the coolant temperature sensor reads it and gives the computer the signal to activate the cooling fan and other usage for the engine management/ fuel demand
