My sable starts fine on warm days but on cold mornings I have to crank it over for a long time it putts and putts then I hold the peddle to the floor and eventually it starts and then after I start it I can turn it off and the car will start all day long no problem

Check the fuel pressure and also test the engine coolant temperature sensor/throttle position sensor-

Does the coolent temp sensor tell the computer to give more gas or air or is that not what it does

The CTS is just like a choke on the carburetor-it tells the computer to increase fuel -a cold engine needs more fuel during cold starts. After the CTS switches to closed loop the oxygen takes over on controlling fuel demand.
