Coming from where my fan attaches to my engine. Car is not overheating but on my dash just above my ashtray I have a "command center" notifying me of any warnings I need to be aware of. It says coolant sensor bad. Which is what caused the overheating the first time. We changed both coolant sensor and thermostat. Now after a drive all the leaks are coming out of radiator, but my overflow tank stays full. Any ideas?

A coolant pressure test will show up any external coolant leaks, from what you say it sounds as if the water pump seal may be leaking, if you are checking the coolant with the engine hot, the coolant will have expanded and it will appear that the level is correct, check it cold and the level will be lower, eventually the hot level will start to drop and the cold level will be very low.

Can I rig the weep hole so that it does not leak anymore?

No you cannot do that, it just will not work, you need to replace the pump.

Okay so hear this one. We put stop leak in my system. It stopped leaking for a couple days. Then my thermostat got stuck open, so my engine was running cold. Today it started leaking again and I noticed my thermostat was reading again cause my gauge was normal instead of reading 110°. Well shortly later I was back at 110°. Is that even possible?

Stop leak is not a good idea, it can block radiators and cause over heating, get the water pump replaced and get the thermostat replaced and radiator cleaned to remove all that stop leak muck.
