17mm Bolt holding the main double pulley for the two serpentine belts has come loose on its own twice now. First time it blew one belt and threw the other. I just replaced both belts and it came loose again. How do you keep the bolt from loosening?

Are you referring to the harmonic balancer? (Crank pulley). Those pulleys must be torqued to around 180ft/lbs. On some models you have to buy a crank pulley holder so you can properly torque down the bolt without the engine turning over.

Also, you can put some mild loctite on the bolt, however if it is torqued to spec, this is not necessary.
