Engine Performance problem

I recently replaced my carb with a remanufactured one and it starts fine but after you drive it for a bit it starts dumping more gas into itself. You have to have one foot on the gas and one on the brake, which is not good in my mind, but sometimes it runs normal again for a few and then chokes out. I've had two mechanics look at it and they say it doesnt do it when they drive it, but one suggested I remove all the vacuum lines that arent needed. Could that be the problem? Or should I get a new carb? When it does stall after choking itself you have to hold the pedal to the floor to start it again. Any advice?
