Does anyone know why my 2000 caravan is struggling to stay running when stopping for a light and often stalls. This mainly happens when the air conditioning is running.

Has the check engine light come on? Also, the AC places a load on the engine, but the computer should adjust the idle for that. How does the engine run other than at idle? Have you checked for vacuum leaks?
