I've had issues getting heat or A/C to my car's cabin. I've checked the heater core and it seems to have good flow. I've replaced the thermostat and the blower motor still pushes air. What else can I try with my temperature control knob "stuck" (by stuck I mean it turn with pliers but eventually returns back to original position. Could this knob be my only issue? What else could it be?

It does sounds like you have a control issue with the blend door cables or the control arms. Here are diagrams below to show you how to fix it and how the system works. Check out the diagrams (below). Please let us know what happens.
