Do I have to remove the dash to replace the heater coil?

Is it difficult to replace fuel pump?

How about a new odometer?

No you don't have to remove the dash to replace the heater core. BUT you do have to loosen it so you can push it up some. The fuel pump can be fun to replace depending on how rusted the retainer ring is, and how rusted the fuel lines are.
