2000 Chevy Lumina how does the thermostat affect the coolin

car overheating replaced the water pump did not work was told the head gaskets were probably damaged and leaking used red devil to seal all the gaskets, however the mechanic did not replace the thermostat instead left it with no thermostat could this be why it is still getting hot the car is not blowing any smoke there is no water in the oil and no unusual noises

Without the thermostat it will not caused the engine to overheat-Now if there's one in place and its stuck closed it will overheat the engine-

Could be airlock in it-try bleeding it don't work get it block and pressure tested.
