2000 Chevy Impala over heating and shutting off

the car keeps over-heating and then it shut off. the thermostat has been replaced and i added coolant. what else could possibly be causing the car to over heat and what, if any, damage could adding too much coolant do to the car?

Just fill the coolant to the full mark on the jug. Also, if the t-stat is good, I would move to the radiator. Try flushing it or having it rodded out. It may be partially plugged.
