I would like to know if it would be standard procedure for the oil and oil filter to be changed after the Intake Manifold Gasket and lower manifold gasket is replaced if there was a possibility the oil could be contaminated by a leaky gasket?

I have seen it all. It would be a common sense proceedure at least. Not to say some garages have common sense. Or not.A good shop would check the oil at least!

Would they check the oil levels or for contaminates? And why would they change the oil and not the filter? Are dealership service departments usually good garages?

What happens at MOST dealers, is the mechanics do the mechanical work, then the lower paid helpers do the oil changes, and he may have "forgot" the filter. Seen it happen.

Antifreeze and engine bearings DO NOT like each other very much, it would take a bit of driving, and you would see smoking long before it actually siezed. However, if the engine oil and filter were not changed, and it was 2-3 quarts overfull, it would sieze almost immediatly.
