Just bought a 2001 astra. Whislt driving I notice the temp gauge sitting on half way. Sometimes slightly over half
I was just wondering what would be the correct temp once car has been running for 30 mins
Also would I expect to see the cooler fan running at this temp?

Temperature gauges are notoriously inaccurate. That's why they usually don't put numbers on them. Half scale is about normal. On one of my vehicles, one quarter is normal. You'll learn what normal is by observing it for a few weeks.

Electric radiator fans won't turn on while the vehicle is moving because the natural air flow is sufficient to cool the radiator. You can expect to see the gauge reading creep up on a warm day when stopped in traffic. That's when you might hear the fan turn on.
