Do I have to take my 2000 VW Passat 2.8 V6 to a VW repairman for transmission fluid?

No problems yet. Just wondering since doesn't have a dip stick.

I would, whether you a stick or automatic, have a tech check and add for you and see if the trans needs to be serviced.

Typically they are lifetime filled, only need fluid added if repairs are performed. There is a procedure at a certain temp, if you don't know what you are doing it's best to let the dealer do it. Fkuid is very pricey tho.
