2000 Pontiac Bonneville Replaced Radiator Put On New Head Gasket Bypass Hose

I have replaced the radiator, put on a new head gasket, replaced the bypass hose, and replaced the thermostat. The dash is still reading "engine hot/AC disabled," and the temp gauge is still climbing. Why is this?
