My car feels like it has kangeroo juice in it. when changing gear it feels like it wants to go then pulls back and keeps jolting

I would have the basics checked like plugs, coils, etc.
have them check the cat converter as well. if it is clogged, it will do what you are expierenced.

the spark plugs have been replaced too

Run a scan as well, remember not all codes will set a check light.
