Ac issue. Plymouth breeze 1999-low side 56/high side 260. When turned on condenser fan runs. When I run water over condenser, fan shuts off. Feel alot of heat from engine. When going up hill when hot, car shutters till you turn it off.

Your cooling fan system is 2 speed. It sounds like you have high speed but not low speed. Those pressures are too high and if the fan is shutting off, it must only have high.

I realize that. It should not have done that unless the pressure dropped really dramatically and then the temp would have gotten much colder. I think you're missing low speed.

Would low fan speed cause the issues of not cooling, high pressure, and shuttering going up hill when hot?

You haven't posted any current symptoms except that there is a lot of heat in the engine compartment that doesn't mean anything. What did fixing the fan change?
