What all can cause misses & sluttering after 2000 RPM?

I've changed the plugs, plug wires, coil packs, head gasket, cleaned the injectors n all !

it feels like it's sufforcating to mainly go up a hill !

Have exhaust back pressure checked may have restricted CAT

Last year I had a bit of the same issue and the guy at the muffler shop recomended I change the catalytic converters which I did n then found out it was the fuel pump

but I remember also that he put on universal catalytic converters that only have one housing on each side instead of the 2 like the original

could that be the problem?

The test will tell also maybe good to check fuel pressure. Non OEM Cat tend to fail is check engine light coming on?
