overheating and then back to normal

Why does my 1998 Chevy Astro van overheat & then go back to normal temp level once there's a gurgle sound from behind the dash? The coolant temp goes up so I turn the heat on to help dissipate the high coolant temp. The heater blows cold air & the temp goes up until the gurgle sounds from behind the dash.

Once the gurgle sound occurs(sounds like finishing up a milk shake), the heat goes back to normal & the heater blows warm air again. This cycle continues over & over but I don't want to let the engine overheat

Check the thermostat,heater core and heat control valve
