You really don't want to drive that without a thermostat. That will cause major issues with computer controls.
Here in belize people remove the thermostat of there cars its common thing to do. The gasket is this thing

No, it's the wrong thing to do. Just because they are still in the stone ages doesn't change how the car works. The computer will not go into closed loop if it's not hot enough.
What if the Thermostat is not the problem because before it would only overheat if you have it parked, If the pickup is running it would not overheat .
It may not be but without a thermostat, you lose all control of engine temperature.
